During the last days of summer I love to enjoy dishes which remind me of the leisurely season. The weather is still hot and I want a soft transition to the back to normal schedule. This fresh cucumber soup is the best to not leave those hot summer nights...
I used regular yogurt this time but this is only one version of what you could make with a cucumber base. As always it is an extremely simple recipe that I am sharing with you. I love to keep it easy with whole ingredients. Enjoy!
Ingredients (for 2 persons) :
- 1 large cucumber
- 1 plain regular single serve yogurt (for 2 I didn't even put the whole container)
- a few cilantro's leaves
- 1/2 lemon
- salt & pepper
1. Cut cucumber and crush it in your mixer.
2. Add yogurt, cilantro, lemon, salt & pepper and mix everything until smooth.
3. Refrigerate and serve cold.
