How great those vegan fig and coconut cheesecake bars look? I've wanted to do them since I saw the recipe on Margie's site. These bars are many things beyond delicious : dairy-free, gluten-free, refined sugar free.
Margie is a professional cooker based in London and she has amazing ideas.
I did this recipe which is simpler than it looks (look here). And I learned that you can make a cheesecake's texture with raw cashews, I had no idea!
In Margie's recipe the cashews need to be soaked. I wasn't aware that this method can be healthier when consuming nuts (easier digestion and unlock benefits of the product).
