Power of Color
When it comes to fruits and veggies I am amazed by nature's range of colors. Purple sweet potatoes are definitely a competitor in the world's of most beautiful products!
Different colors have different health benefits. Not only purple foods can make your plate sophisticated and original but they also have many benefits. They are full of antioxidants : a purple potato has more than 4 times the antioxidant content than a regular potato. Some purple food like cabbage, eggplant or blackberries boost immunity and help to control blood pressure.
I sprinkled my purple sweet potato with turmeric, another bright ingredient full of antioxidants and anti-inflammatory virtues.
For this recipe I simply let the sweet potato cook in boiled water for 25 minutes. It makes a perfect side. I also made a simple puree mixing the rest of the baked potato with 1/4 avocado to make it creamier.
