Island Spirit

I was in need for a fun healthy treat. What would bring a smile on my face? I thought yellow and island vibes... And I came up with this coconut chia pudding pineapple bowl. 

Pineapple bowl is such an easy and fun way to enjoy your food. I recently went to a Thai restaurant where chicken was served in a half pineapple, I love it! It brings festivity and joy to the table.

For a little bit more island vibes I did the chia pudding with canned coconut milk. First time doing it since I usually go with almond milk. It's very good, thicker and richer. I used Trader Joe's organic reduced fat coconut milk, perfect product.

Ingredients for 4 portions : 

- 5 chia seeds tablespoons

- 1 can of coconut milk

- 2 pineapples

> Mix chia seeds to coconut milk and let in fridge for 3 to 5 hours.

> Cut pineapples in 2 and dig to make a bowl (keep flesh for topping).

> Pour chia pudding into pineapple bowls.
